How to Cut Pizza Without the Toppings Sliding Off

The pizza comes out of the oven perfect, and then the first cut ruins everything: the cheese sticks to the knife, the tomatoes slide to the edge, and the slices end up with ragged edges. A few simple rules keep your pizza looking the way it did when it came out of the oven.

1. Wait a moment before cutting

Straight out of the oven, the cheese is molten and drags the toppings along when you cut. Let the pizza rest for 1 to 2 minutes. The cheese sets slightly but stays warm, and the toppings stay put.

2. Use the right surface

Cut on a wooden board or directly on the plate, not on the pizza stone or a coated baking tray. Wood gives a little, so you won't damage the stone or the coating.

3. Don't press – cut

The main problem with knives and pizza wheels is pressure from above: it squashes the dough and pushes the toppings ahead of the blade. A tool that slices through the dough instead of crushing it works much better.

4. Use pizza scissors

Pizza scissors solve exactly this problem. The lower blade slides under the crust, the upper blade cuts from above, and the toppings stay untouched. With thick or airy crusts such as Roman pan pizza, pinsa or focaccia, the difference is huge. Read more in our comparison pizza scissors or pizza wheel.

5. Cut from the edge to the center

Start at the edge and cut to the center in one motion. You'll get even slices, and the tip stays stable. For rectangular pizzas, flatbreads or sheet-pan pizza, simply cut straight strips and then squares.

6. Keep the blades sharp

A dull blade tears the dough and drags the cheese. Choose stainless steel blades that stay sharp for a long time, and clean them after every use so dough residue doesn't build up.

Frequently asked questions

How long should pizza rest before cutting?

1 to 2 minutes is enough. The cheese firms up a little, but the pizza stays hot.

What's the cleanest way to cut pizza?

With sharp pizza scissors. They cut from above and below at the same time and don't push the toppings around.

Can you cut on a pizza stone?

Better not. Blades can scratch the stone and go dull faster themselves. Move the pizza to a board before cutting.
